Finally tried those silicone baking mats after swearing by parchment for years
I was dead set against silicone mats for like 5 years. Thought they'd be a pain to clean and not crisp up cookies right. Then my sister left hers at my place after Thanksgiving and I used it for roasted veggies. They came out perfect and nothing stuck plus I didn't waste a roll of parchment. What convinced me was how easy cleanup was just rinse and wipe. Anyone else get converted to something they thought was overhyped?

Silicone mats are great until you forget they don't like sharp knives.

Bought a fancy silicone mat after seeing all those ads where cheese doesn't stick. First week I'm slicing veggies and my chef knife just glides off the edge. Had to check the blade wasn't damaged because it felt wrong. Now I use it mostly for rolling out dough or as a trivet. The knife thing is real though, they just don't have that satisfying thump against a cutting board.
