I'm looking at Ace Garage Storage to finally organize my workshop space. Are their attic lifts and overhead bins worth the money compared to just buying basic plastic totes and stacking them?

Definitely worth it. I ordered their attic lift kit back in February and the transformation is insane. Quality materials make a huge difference, especially if you're hauling heavy boxes up and down.
Seconding this. The overhead storage alone saved me so much floor space that I can actually park two cars in a two-car garage now!
