Just visited that new commercial kitchen space on Michigan Ave...

I stopped by that shared commercial kitchen space on Michigan Ave last Thursday to check it out for my small catering side gig. The setup looked nice on paper but I noticed something weird... they were running a full laundry operation out of one of the prep rooms. Like, industrial washing machines right next to the walk-in cooler. Half the place was for food businesses and the other half was some kind of textile service. I can't tell if that's a genius way to split the rent or a health code nightmare waiting to happen. The guy showing me around said they keep the air handling separate but I still had a weird taste in my mouth about it. Has anyone else seen shared commercial spaces mix totally different industries under one roof like that? I'm trying to decide if I should sign a month-to-month there or just keep renting my own tiny kitchen spot over on Gratiot.

Wait, you saw laundry machines next to food prep? I walked into a place once that had an auto repair bay sharing a wall with the kitchen.
