Why does nobody warn you about freezer-burned cheese crisps?

I grabbed a bag of shredded cheddar that was sitting in my freezer since November, tossed it straight into a hot pan, and the whole thing turned into this weird rubbery plastic sheet that tasted like cardboard. Learned the hard way you gotta thaw it slow and pat it dry first, has anyone else ruined a quesadilla this way?
