The week everything went right with my pour-over
Last Wednesday I had one of those mornings where every step just clicked. Water temp was exactly 200 degrees, my grind was spot on, and the bloom looked perfect for 35 seconds. The whole cup came out sweet with zero bitterness, which never happens for me. Usually I mess up something like the pour speed or the water ratio. Has anyone else had a random day where your coffee just tasted better for no clear reason?

Three times in the last year I've had that exact same thing happen with my Chemex and both times I was convinced I was making a terrible cup. One time I accidentally let my water sit for way too long after boiling and it was probably closer to 185 degrees, and somehow that was the smoothest coffee I had ever made in my life. I honestly think there's this magic window where you accidentally do everything wrong but it works out because you're not overthinking it. On those days I swear the beans are just smiling at me from the bag and the grinder decides to actually cooperate instead of being its usual jerky self. Then the next day I try to copy everything exactly and it comes out tasting like dirty dishwater. It's like my coffee setup has a personal grudge against me most days but every once in a while it decides to be nice just to mess with my head.

Man that sounds like a dream morning right there. I had a similar thing happen about two weeks ago with my V60 - water temp was around 205 and my grind looked way too coarse but somehow it came out perfect, like fruity and clean with no bitterness. Its weird how sometimes everything just lines up even when you think you messed up. I swear theres some kind of coffee luck that decides to show up randomly. Maybe the beans were just sitting at peak freshness that day or the humidity in the room was just right. Either way I totally feel you on that magic cup moment.
