Unpopular opinion: I stopped tasting with a clean spoon after 22 years on the line
Last month I was working a busy Friday at the bistro and realized I had grabbed the same spoon about 40 times during service without thinking about it. Our new dishwasher guy, Marcus, watched me do this for maybe 20 minutes and finally said, 'Chef, is that the same spoon you been using all night?' I froze because he was right, I had been tasting and putting it right back in the pot without even noticing. Now I keep a little cup of tasting spoons on my station and it has honestly cleaned up my whole flow. Any of you have a bad habit you caught way too late in your career?
