TIL that whole carrots roast sweeter than sliced ones
I tossed some whole carrots in the oven for a roast and they caramelized perfectly, so now I think pre-cutting them just ruins the natural sugars.

Sliced ones get a better crust, though.

Olivia's right about the crust on slices. I get that crispy edge by leaving them in a hot pan for a minute after roasting.

Lost the crust but gained all the flavor, so totally worth it.
