Appreciation post: My creamy sauce broke during service.

I was rushing and the sauce separated. An old trick with a cold spoon helped blend it again. How do you handle broken sauces?

What’s the most panicked you’ve ever seen someone over a sauce? My buddy was doing brunch service once and his hollandaise just gave up... he was sweating bullets. He grabbed a cold metal bowl, whisked like a madman with a single new yolk, and slowly drizzled the broken mess back in. It actually worked, but he looked like he’d run a marathon after.

Does accidentally making gravy with the texture of wet sand count? I once spent 20 minutes just trying to whisk out the lumps while my potatoes got cold.

Broken hollandaise is a full-on kitchen nightmare, that fix sounds like a magic trick. Rubywalker's lumpy gravy story has nothing on that kind of pressure, lmao. Your buddy must have aged five years in five minutes.
