Last Saturday in Portland, a line cook tasted my beurre blanc and said 'you're cooking the butter, not melting it,' and it clicked. I cut the heat way earlier, whisked like crazy, and the texture came out silky for the first time in 4 years on the station. Anyone else had a single 5-second critique that rewired a whole technique for you?

Man, that hits home. I had a similar wake-up call years ago with my mashed potatoes, an old chef told me I was beating them to death instead of folding them. One sentence about overworking the starch and suddenly they came out fluffy, not gluey. It's wild how a tiny thing like that can fix years of muscle memory.
