I swore off meal prepping on Sundays until a week in Sacramento changed my mind
Last month I spent 3 hours on a Sunday cooking rice and chicken for 5 days and by Wednesday I was so sick of it I threw the last two containers away, but then a coworker said she cooks two different meals and freezes half, and that one change made the whole week feel less like a punishment, so now I'm curious what small tweak made you stick with it?
Cook two different meals sounds smart but I'm wondering how you actually split it. Do you eat one fresh all week and freeze the second, or alternate days so you're not hitting the same thing twice in a row? And when you thaw the frozen one, does it actually taste decent on Thursday or does it come out mushy? I tried freezing chili once and it was fine, but rice and chicken never held up for me.
