Used to trim silverskin with a 6 inch boning knife, now I use a spoon and it takes half the time
I fought that membrane on pork tenderloins for 12 years until a guy at the shop in Amarillo showed me the spoon trick back in March. You slide a regular soup spoon under the silver and it peels off in one strip instead of tearing into the meat. Anyone else got a weird tool that beats the knife for prep work?
Oh man the spoon thing changed my life on tenderloins too. Weird one for me is a grapefruit spoon with the little teeth, that thing gets under the silverskin on a rack of ribs better than any knife I own. The teeth grab it and it just zips right off.
