The old butcher in Amarillo who grabbed my wrist and said 'you're losing money in your trim bin'
I was in Amarillo visiting my cousin's shop when an old butcher named Ray watched me break down a whole ribeye for maybe two minutes. He grabbed my wrist mid-cut and pointed at my trim bin, which had a good pound of clean fat and meat scraps sitting in it. He said 'that's four dollars a pound you just threw away, son' and showed me how he folds those scraps into his ground beef blend instead of tossing them. That one interaction last month made me rethink every trim pile in my own shop back home. How do you all handle your trim, do you grind it in or sell it off separate?
