Shoutout to the $250 boning knife I almost didn't buy
I was cutting up a whole hog last week and my old knife just couldn't get through the shoulder cleanly. The new one (a Forschner, if you care) went through the joints like they were butter, no sawing needed. It felt like I saved an hour of work and a ton of frustration on that one job. Anyone have a favorite blade for breaking down bigger animals?

Ever think about how a knife that good changes your whole approach to the work? With my old blade, I'd plan cuts around avoiding tough joints, maybe even leaving some meat on the bone to save the hassle. Now I go straight for the ideal seam because I know the tool won't fight me. It turns a chore into something closer to actual butchery, where you're following the animal's build instead of just hacking through it. That confidence from good steel is a whole different thing from just saving time.

My old knife was so bad I'd call breaking down a chicken "advanced geometry." I'd spend ten minutes looking for the path of least resistance instead of just cutting the thing. Got a decent blade last year and the first time I hit a hip socket clean I felt like a genius who just discovered fire. Turns out I'm not bad at this, I was just using a butter knife to do surgery.
