Four hours of hand-cutting sounds like a serious commitment. My knife skills top out at making sure the pizza box doesn't tear when I'm carrying it. I once tried to julienne a carrot and ended up with something that looked like it went through a wood chipper. That level of control is definitely for people with more patience and sharper knives than me.
