Found out frozen vegetables work better than fresh for meal prep
I kept buying fresh broccoli and bell peppers for Sunday meal prep but by Thursday they'd be slimy and I'd throw half away. Last month I tried swapping to frozen bags from the grocery store and honestly they hold up way better in the fridge after cooking. The trick is to pan fry them dry for a few minutes first to get the water out before adding oil or seasoning. Has anyone else made the switch and noticed a difference in how long your meals last?

The 10 pound bag of frozen mixed vegetables at Costco is $8.99 and lasts me three weeks of lunches. Fresh produce from the same store would cost triple that and rot by day four. One thing nobody talks about is how frozen veggies actually retain more nutrients since they're flash frozen at peak ripeness, while fresh stuff sits on trucks and shelves losing vitamins. I started adding frozen spinach to my rice right when it goes in the cooker and it thaws perfectly without turning into mush. For bell peppers though, I still buy fresh and roast them first because frozen ones get that weird soggy texture no matter what you do.

Doesn't flash freezing actually just lock in the nutrients they already have, not add more?

Frozen spinach in rice is a game changer lol. Costco frozen veggie bags are the real MVP.
