Why does everyone keep thinking you can quench a forge weld in water?

Saw a guy on YouTube last week dunk his billet right into a bucket, and I just about lost it. That thermal shock cracks the weld every time, so why is this still a thing?

Bro, I saw my buddy do this exact thing at a hammer-in last summer. He was showing off his new billet, talking all big about his damascus, then just tossed it in a bucket of water like it was hot steel from a forge. The thing split right down the middle with a loud crack, and he just stood there staring at the two halves in his hand. I couldn't help but laugh, but he was so mad he packed up and left early. Total waste of a good weld, man.
