Why picking a cheap spatula over a silicone one cost me a full breakfast last Sunday.

I was cooking eggs and had to choose between my flimsy metal spatula or a new silicone one sitting in the drawer. I went with the metal one because it was right there, and it scratched up my nonstick pan bad. Now the eggs stick every time and I gotta scrub for 10 minutes after. Anyone else deal with regret over a dumb kitchen tool choice?

Three years ago I bought a five dollar Teflon pan from a discount store and still use the same scratched up metal spatula I got in a college starter kit. The pan is basically a scratching post at this point and my eggs still slide out perfectly with a little butter. You gotta preheat the pan on low and let it come up slow, that's the real secret not the tool. I've watched people spend forty bucks on silicone spatulas and still burn eggs because they crank the heat to high. Your nonstick coating was probably already on its way out if one scrape ruined it that fast. Metal spatulas have been around forever and they work fine, just take thirty seconds to learn how to use your pan right.

You tried preheating on low for a full two minutes before adding butter? Most people don't wait long enough and think the pan is ready when it's barely warm. Also check if you're using too much heat after the eggs hit the pan, medium low is usually all you need. The metal spatula isn't the problem if you're not scraping like you're trying to dig a hole.
