Heard a guy at the Kenosha farmers market say he freezes his ginger whole, and now my grater sits in the drawer
I was standing in line for peaches at the Kenosha farmers market on Saturday and the guy ahead of me told the vendor he never peels ginger anymore, just throws the whole knob in the freezer. I tried it that night with a $2 piece I had sitting on the counter for two weeks, and when I grated it frozen the skin basically disappears into nothing. No stringy bits, no dried out edges, and it keeps for months instead of going soft in my crisper. Now I keep three knobs in the door and just grate straight into the pan. Anyone else freeze stuff they used to toss after a week?
Yeah that trick works but you gotta peel it first before you freeze it. I made the mistake of throwing a whole chunk in the freezer once and spent 20 minutes trying to grate a rock. Now I peel the root, cut it into smaller pieces, and keep a bag in the freezer. Lasts forever and you just grab a piece and run it over the microplane straight into the pan. No stringy bits either, which is the real win.
