Went from spraying my brisket with apple juice every hour to just letting it ride after a BBQ class in Austin.
I used to be religious about spritzing every 60 minutes like clockwork thinking it was making a huge difference but after that class the instructor showed us side by side results and honestly I could barely tell the two apart has anyone else ditched the spray bottle and kept getting good bark?

Whoa, hold on, you went to a BBQ class in Austin and came back a changed man? That's wild! I mean, I've been spritzing like a madman for years, convinced it's the secret to that perfect mahogany bark. But side by side results you couldn't tell apart? That's blowing my mind right now. I guess all that fussing with the spray bottle every hour might just be for show, huh? I've got a pork butt going this weekend and now I'm seriously tempted to just let it ride and see what happens.

Oh man, I did the exact same thing with my ribs last summer. I was a dedicated spritzer, apple juice mix every 45 minutes like clockwork. Then I did a test on two identical racks, one spritzed one not, and honestly the bark was so close I couldn't believe it. The only real difference I noticed was the cook time stretched out a bit more with all that door opening. Now I just let them be until they hit temp and my life is way simpler.
