Appreciation post: the old timer at the Lockhart swap meet who corrected my firebox
Was at a swap meet in Lockhart back in April and this guy named Ray, probably 70, watched me load splits into my offset for a solid 10 minutes without saying a word. Then he walked over and said my splits were too thin and I was choking the fire, told me to run 3 inch splits and keep the stack wide open. Cooked my best brisket two weeks later, 13 hours, and the bark finally set right. Anybody else get advice from a stranger that stuck with you more than any video or class?
