Watched a baker ruin a whole batch at the farmers market yesterday

I was at the Portland farmers market picking up some flour and saw a guy selling sourdough. He was pulling loaves straight from a hot oven and stacking them on a plastic folding table with no cooling rack. Within 15 minutes the bottoms were sweating and the crust turned to rubber right in front of customers. He didn't even use parchment or a breathable cloth. Has anyone else seen this mistake at market stalls and wanted to step in?
