Skeptical about using a kitchen scale for everything, but my sourdough improved overnight.
Always measured flour by volume, thought a scale was extra. Switched last month, my hydration is now perfect every single time. Anyone else find one tool that fixed a stubborn problem?

Hold on, is your bread really that bad that a scale changes your whole life? Feels like we're overcomplicating making flour and water work.
