Butter temperature actually matters more than I thought

I always thought room temp butter was room temp butter, but last week I checked mine with a thermometer and it was 58 degrees. Recipes want 65 to 68, and my cookies were flat for months because of it. Has anyone else had this issue with their kitchen running colder than the recipe assumes?

Even cold water baths work if you're in a rush. Just cut the butter into small cubes first. Takes ten minutes instead of waiting around. Also worth checking your oven temp while you're at it. My oven runs twenty degrees cold and that messed up my bake times way worse than the butter ever did.
