Back in 2018, Wally from the feed store said square is fine for a taco truck and after three years and $0 in processing surprises, I finally get why he laughed at my $800 tablet setup.

Honestly, the second I see a food truck owner with a $2000 iPad and a card reader that needs a damn power bank, I know they haven't talked to someone who actually runs a route yet. I did the same thing you did, bought the fancy setup with all the bells and whistles, and spent more time fighting the software than serving food. The simple square reader just works, and the fees are flat and predictable. You don't need inventory tracking for 15 menu items, you need to move the line fast. Tbh, Wally probably saved you a ton of headaches and a few grand. The only thing I'd add is get a good old fashioned paper notebook as a backup, cause wifi goes down at the worst moments.
