County permit guy's advice saved my food truck $400

Last month a health inspector told me to skip the fancy vent hood and just get the cheaper portable one since I only fry twice a week. I almost ignored him, but after 3 inspections and zero fines, he was totally right. Anyone else get good tips from inspectors instead of the paid consultants?
