Did you ever actually try it though, like stand there and just listen to a plane's engine hum?

Whoa, wait, did you say he was a United mechanic in Newark? I used to fly in and out of Newark all the time for work, and I've heard stories about those guys. Them telling you to "listen to the airplane" sounds like some next-level Zen mechanic stuff. I'm trying to picture a guy in greasy coveralls telling you that while you're both staring at a 737's engine. That's wild, man. Like, what does that even mean? Does the plane actually make different sounds when it's sick? I've always just assumed engine noise was engine noise, but this guy was basically saying there's a secret language. Respect to him for having that kind of patience and skill though, that's not something you learn overnight.
