Air fryer wings not crispy? Here's what I found.
I read a testing article from Serious Eats last week where they measured moisture loss - turns out you need to flip wings at exactly 8 minutes in an air fryer, not 5 or 10. I tried it on three batches and the difference was night and day with way more crunch. Has anyone else found a weird time trick that made your food come out better?

Yeah that 8 minute flip is legit. I used to flip at the halfway point and got decent results but not great. Tried 8 minutes on a batch of drumsticks and the skin actually snapped when I bit into it. Pretty sure it has something to do with the moisture escaping at the right time before the outside sets up. Timing really is everything with these things.

But have you actually tried leaving them a little longer before flipping? @cole_patel41 I respect the 8 minute trick, I really do, but I found my drumsticks came out better at 10 minutes. The skin got a little darker and the crunch lasted longer even after I took them out. I think it depends on your air fryer model and maybe how many pieces you have in there. Mine is a smaller basket so maybe the heat is more concentrated. These things are all a little different and one time might not work for everyone.
