inStumbled on a stat that blew my mind about brisket stall temps
Oh man tell me about it. I swear my smoker has a personal vendetta against me because every time I hit that magical 165 the stall decides to camp out for like four hours just to humble me. My last brisket had me refreshing my thermometer app like it was gonna magically speed things up.

inOverheard a homeowner say her fridge lasted 22 years before it died
My 2013 Samsung fridge died after 8 years. The compressor went out and the repair guy said it would cost more than a new one. I get that things used to last longer but I think people cherry pick the good examples. Nobody posts about the fridges that died after 5 years back in the 80s. Also, that 1982 GE probably uses way more electricity than a modern one so the savings aren't that clear.

inHot take: That 30 minute mortar rest after mixing isn't optional, it's the whole game
Is anyone else out here factoring in humidity when they time their slake? @torres.leo nailed it about the 30 minutes being the sweet spot, but I swear nobody talks about how the air moisture changes things. I was on a job in Seattle where it was foggy and wet, and my mix actually needed like 45 minutes to set right. The dry Arizona air sucks the water out faster, so you gotta work quicker after the slake. It's not just a timer on the bag, it's a whole science experiment with the weather. People hate on the waiting but that's when the chemistry actually happens.

inI had to choose between climbing spikes and a bucket truck for a backyard job
The bucket truck is tempting but honestly that mesquite bark is tough to save with spikes even when you're careful. Sometimes the homeowner's look is worse than the actual damage, they might not even notice in a week once it calluses over.

inHad to choose between a $400 dog bed and a $25 pile of old blankets
Wait, did you say he tore through a blanket in just three days?
