My uncle asked the same thing last year, so I showed him my own phone and walked him through a fake login on my account. I told him it's like a second lock on the front door, even if someone steals your key, they still can't get in without the code. Then I let him try it on his own bank app with me watching, and once he saw the code pop up on his phone, it clicked for him. The trick was not explaining it as tech stuff, but as a habit, like checking that you locked the car before walking away. Now he actually gets annoyed when a site doesn't have 2FA, so that's a win.
