My pour over timer hit 4:30 and I finally got it

I've been doing pour overs for about 2 years now, always aiming for that 3 minute mark everyone talks about. Last Saturday I got distracted by a package delivery and let my V60 run to 4:30 before I poured the last bit. The cup came out smoother and less bitter than anything I've made before. Turns out my grinder settings were too fine for what I thought was the right time. I started messing with longer brew times on purpose and now my morning cup tastes completely different. Has anyone else found that their perfect time is way beyond the standard recipe?
