Warning: found out a whole beef quarter is closer to 160 lbs dressed than the 190 I always quoted
I was putting together a quote for a guy in Springfield who wants a quarter cow for his chest freezer, and I pulled out my old weight chart from when I started cutting in 2016. Turns out the dressed weight on a quarter is usually closer to 160 lbs than the 190 I had written down in my notebook, and that gap messes with my whole hanging weight math. I got it from the extension office handout my cousin mailed me, of all places, not some fancy app. So I ended up telling the customer a 40 lb range instead of a flat number and he was fine with it. How do you all quote quarters without getting burned when the animal runs heavy or light?
