My neighbor's 'dumpster dinner' challenge actually worked out weirdly well

Last Tuesday, my neighbor Carol knocked on my door holding a bag of slightly bruised peppers and a half loaf of day-old bread she'd pulled from the alley behind the bakery. She dared me to make a meal with just those plus whatever I had in my pantry, no trips to the store. I threw together a weird pepper and bread casserole with some canned tomatoes and shredded cheese I had for about $2 worth of ingredients. Honestly, it tasted like a fancy strata, which blew my mind. Has anyone else ever gotten a surprisingly good dish out of someone else's rescued food scraps?

Yep, bread casserole fixes everything. Old bread soaks up anything.
