A line cook in Toledo told me to save my onion skins in a ziplock in the freezer, and now my soups taste way better
I was chatting with this guy who runs the grill at a diner near my apartment and he said they never throw out onion skins, carrot peels, or celery ends, they just keep a bag going in the freezer. I started doing it about 3 weeks ago and made a pot of bean soup that cost me maybe $2 total since I used stuff I would've tossed anyway. The broth came out darker and sweeter than the boxed stuff I used to buy for $3.50 a carton. Now I'm wondering what else I'm throwing away that I shouldn't be. Does anyone else keep a scrap bag, and what do you put in yours?
