Last week I realized our lunch rush at the deli on 5th Street was way smoother, and I traced it back to when we switched to prepping all the vegetables the night before after a 3-day stretch of running out of mushrooms and carrots. We went from a chaotic 20 minute wait at noon to a steady 5 minute flow, and the only real change was the prep schedule, not the menu or the staff. Has anyone else seen a dumb scheduling tweak fix a problem they thought was about skill or equipment?
